Just had to say something, since a few people have already asked and a few more have probably assumed, that kvass is not beer.
The manufacturing process of kvass and beer is different, the ingredient list is also different. Beer is considered an alcoholic beverage with alcohol levels ranging between 3%-8%, and falls under the laws and regulationsl of BATF, while kvass is a soft probiotic fermented drink with traces of alcohol as low as 0.3% and therefore is subject to FDA rules only.

Speaking of manufacturing, we ended up signing a contract with a local facility we'll be using as the production site, and after recently speaking, again, with the health inspector, we were told that manufacturing may be given a "go" in less than two weeks.
